So, being pregnant, I'm thinking food more often than usual and we made a new recipe a couple days ago that was delicious and healthy! I think I found it in a Parenting magazine, but not sure. It's called Shell Surprise.

SHELL SURPRISE
16 Jumbo pasta shells
2 Cups of broccoli
15 oz of skim ricotta
1/2 Cup skim mozzarella
2/3 Cup Pasta Sauce
Cook 16 jumbo pasta shells, drain and rinse with cold water. Microwave broccoli for 2 minutes. Mix together the ricotta cheese, 2 Cups broccoli, and 1/2 Cup mozzarella. Spoon mixture into shells and place on a baking dish. Top each with pasta sauce and more mozzarella cheese if desired. Bake uncovered for 15 minutes.
After making this the first time, I think I would have put just a little pasta sauce in the mixture before spooning it into the shells also. Or, maybe even sun-dried tomatoes. Either way, it was still super easy to make, delicious and healthy! Hope you enjoy!
Also, with the flu season up ahead, I heard on the news that some foods can help ease your flu symptoms as well as ward it off all together. Those include sweet potatoes, raw almonds, garlic, ginger root and plain yogurt. Stay healthy this year!
